Queen's Cake
Ingredients
- 1 cup sugar
- ¼ cup butter (creamed)
- 1 beaten egg
- 1-1/2 cup sifted flour
- 1 tsp baking powder
- ½ tsp salt
- ½ cup nuts
- 1 tsp vanilla
- 5 tbsp brown sugar
- 5 tbsp cream
- 2 tbsp butter
Instructions
- Pour 1 cup boiling water over 1 cup chopped dates and 1 tsp soda.
- Let stand, while following is mixed in usual manner: Sugar, butter, egg, flour, baking powder, salt, nuts, vanilla
- Add all to the date mixture and bake 35 minutes in moderate oven in 9x12" pan 350°
- Icing: Mix sugar, cream, and butter. Boil 3 minutes and spread on cake and sprinkle with coconut or nuts.
Notes
For variation: you might like to serve ice cream or whipping cream on top, also.
