Queen’s Cake

Queen's Cake
 
Ingredients
  • 1 cup sugar
  • ¼ cup butter (creamed)
  • 1 beaten egg
  • 1-1/2 cup sifted flour
  • 1 tsp baking powder
  • ½ tsp salt
  • ½ cup nuts
  • 1 tsp vanilla
  • 5 tbsp brown sugar
  • 5 tbsp cream
  • 2 tbsp butter
Instructions
  1. Pour 1 cup boiling water over 1 cup chopped dates and 1 tsp soda.
  2. Let stand, while following is mixed in usual manner: Sugar, butter, egg, flour, baking powder, salt, nuts, vanilla
  3. Add all to the date mixture and bake 35 minutes in moderate oven in 9x12" pan 350°
  4. Icing: Mix sugar, cream, and butter. Boil 3 minutes and spread on cake and sprinkle with coconut or nuts.
Notes
For variation: you might like to serve ice cream or whipping cream on top, also.
