Green Tomato Mincemeat

Green Tomato Mincemeat
 
Ingredients
  • 1 peck green tomatoes chopped fine
  • 3 pounds brown sugar
  • 2 pounds raisins
  • 1 cup suet
  • 2 tbsp salt
  • ½ cup water
  • 2 tsp ground cinnamon
  • 1 tsp ground cloves
  • 2 tsp nutmeg
  • grated rind of 1 orange
  • 3 cupfuls chopped apples
  • 3 lemons, pulp & juice
Instructions
  1. Chop tomatoes, sprinkle with salt and allow to stand 1 hour.
  2. Drain and discard juice. Cover with cold water.
  3. Place over fire and boil for 5 minutes.
  4. Drain off liquid, add suet and ½ c water to tomatoes. Return to fire and simmer 20 minutes.
  5. Stir in sugar and boil until dissolved.
  6. Add other ingredients and boil rapidly until thick (about 20 min)
  7. Pack into clean hot jars and seal immediately
Notes
This recipe is a canning recipe (as it says to pack into jars and seal immediately). I am not a scientist, so please proceed with caution on any old canning recipes. Canned foods need a certain pH level to prevent botulism, which is why canned foods generally have some sort of acid added to them. This particular recipe does call for lemon pulp and juice so it's possible it could be totally safe. But consider this your friendly warning/disclaimer.
