Cherry Nut Fudge
Serves: 1lb
 
Ingredients
  • 2c granulated sugar
  • 1c heavy cream
  • Dash of salt
  • ⅛ tsp salt
  • ½ tsp vanilla
  • ½c chopped nuts
  • ½c chopped maraschino cherries
Instructions
  1. Bring sugar, cream, and dash of salt to boil over moderate heat, stirring constantly.
  2. When boiling point is reached, add ⅛tsp salt.
  3. Cook until mixture reaches soft ball stage.
  4. Remove from heat and let stand until almost cold.
  5. Beat until mixture is thick and creamy.
  6. Cover with a damp cloth and let stand for ½hr.
  7. Add vanilla, nuts, and cherries and work in with hands.
  8. Pour into a shallow, waxed-paper-lined pan.
