Sweet Potato Balls
Serves: 12-13 4" balls
 
Ingredients
  • 2-1/2 to 3 pounds sweet potatoes
  • 2 eggs
  • large marshmallows
  • corn flakes, crushed fine
  • 1 cup brown sugar
  • 1 cup light cream
  • 2 tsp flour
  • ½ tsp vanilla
Instructions
  1. Cook potatoes until done, peel and mash.
  2. Add eggs and mix. Let cool.
  3. Form into balls around marshmallows; roll each ball in corn flake crumbs
  4. Place in sprayed (greased) baking dish - do not crowd.
  5. Bake at 350° 10-15 minutes or heated - do not let them pop open
  6. Mix brown sugar and flour, add cream and vanilla.
  7. Bring to hot stage - do not boil; stir well.
  8. Pour around balls and keep warm in oven until served
