Caramel Frosting
 
Ingredients
  • 2 cups light brown sugar
  • 1 cup white sugar
  • ⅔ cups hot water
  • 5 tbsp unsalted butter
  • 1 pound confectioners sugar
  • ¼ cup freshly made coffee
Instructions
  1. Mix 1 cup brown sugar with the white sugar in a skillet.
  2. Heat, stirring constantly, to liquefy.
  3. Slowly add half the hot water.
  4. Remove to small saucepan, add remaining brown sugar and hot water. Stir to dissolve. Boil to 220°
  5. While sugar is cooking, cream butter and confectioners sugar and coffee in mixing bowl.
  6. Pour ??? sugar into the butter mixture
  7. Refrigerate for 2 hours or until thick enough to spread
  8. Stir occasionally to keep icing smooth and spreadable
  9. If necessary, add a little bit of butter or water to maintain spreading consistency
Notes
Makes enough for 2 layer cake. Do not stop process or it will harden and can't be beaten.
